FSSAI for Cloud Kitchens
Cloud kitchens — also called dark kitchens or ghost kitchens — are food preparation facilities that operate exclusively for delivery orders through platforms like Zomato, Swiggy and Dunzo. Despite not having a physical dining area, they are fully subject to FSSAI regulations.
Which License Category Applies?
Most cloud kitchens fall under the State License category if their annual turnover is between ₹12 lakh and ₹20 crore. If turnover is below ₹12 lakh, Basic Registration applies. Large multi-state cloud kitchen operations may need a Central License.
Platform Requirements
Zomato, Swiggy and other delivery platforms require a valid FSSAI license number before listing any kitchen. Without it, your cloud kitchen cannot go live on these platforms. This is non-negotiable and enforced at the onboarding stage.
Key Documents Needed
- FSSAI application (Form A or Form B depending on category)
- Identity and address proofs of the owner
- Kitchen layout plan
- List of food items being prepared
- Water test report (for State License)
- NOC from local municipal authority
Timeline
Basic Registration takes 7–10 working days. State License applications take 15–30 working days. Plan accordingly before your platform onboarding deadline.
